Converting to the NT & Low Carb way of cooking. First Week

Well for a few weeks now I have been going through the NT book to make menu plans that I know our family will benefit from and enjoy. DH finally got paid and off to the store we went.
Down the road I plan to make Kombucha, but not my first week. Going to get used to making my own bread, soaking grains, and eating oatmeal - something I don't think I've ever done because I liked Cream of Wheat better....maybe I will tell you how that goes tomorrow because my oats are soaking overnight, tonight. Although I did want to try having baked oatmeal...so instead of warming it up on the stove, to mix it with butter, cinnamon and brown sugar and pop in the oven...maybe I will like it with some crunch and not mushy. And then we can drizzle maple syrup on it fresh out of the oven.

- Frozen juice - until I can get my juicer, but I read the ingredients on the 100% juice frozen kinds and there is NO high fructose corn syrup so YEAH!


Lunch:
- Canapés with homemade salami – 3 times
- Leftovers – 4 times
- Fresh veggie/fruit juice (once we get a juicer that is...for now frozen fruit and bottle veggie)

Dinner:

Iodine is only needed in trace amounts. Kosher salt and sea salt warn there is no iodine because iodine is an "essential" nutrient to help metabolize excess fat, is important in physical & mental development, it is needed for a healthy thyroid gland & for the prevention of goiter (grossly swollen gland rarely seen these days).

Iodine deficiency in children may result in mental retardation, and it has been linked to breast cancer & is associated with fatigue, neonatal hypothyroidism, & weight gain.

But excessive iodine intake isn't any better because it may inhibit the secretion of thyroid hormone, can produce a metallic taste, sores in the mouth, swollen salivary glands, diarrhea, & vomiting.

If you are avoiding iodine in salt then there are other ways to get it in your food. Seafood, saltwater fish, & kelp contain iodine. Other foods that MAY contain iodine are asparagus, dulse, garlic, lima beans, mushrooms, sesame seeds, soybeans, summer squash, Swiss chard, & turnip greens.

Sounds like you have quite a meal plan & such. I will be interested to see what results you have from it.

There is a book that compliments the NT book and also lists places to get those hard-to-find items. It's called The Maker's Diet by Jordan Ruben. We have been planning ahead so that by May we will be on the Maker's Diet, which also goes along with NT (he has several references to her book in his). I have found some of the recipes he lists are a bit more appetizing than Sally Fallon's, but to each his own I suppose!

Way to go on changing things for your family rather than finding excuses!
