Having one weeks worth of planned meals stretch into two is working out quite nice.
I remember making Casual Chan's (a recipe I found in this book). It is ground beef and/or turkey and bean sprouts with scallions and eggs with soy sauce all cooked up and salt/pepper to taste.
It was ok but certainly not a fave meal so it is beign dropped from the rotation...I am not forcing my family to eat something even I can't stand.
Today for lunch I made chicken tenders that are also listed in the book above along with zucchini cakes per page 411 of the NT cookbook. My chicken came out good, the zucchini sidedish....well I have not been able to make them nor salmon patties in the past stick together while cooking...I make up the batter to directions but then they get nice and crispy on one side and then I go to flip them and they fall apart...ugh...
For dinner it is the leftover tenders made into a chicken salad that is also in the cookbook linked above.
It is ok but still not a favorite....hmmmm looks like I may have to find more recipes to try.
I can't stick with old fave stand by's like chicken and rice and the like because I need to watch my carbs....so I would basically just be able to eat the chicken in that meal and the boys could eat both....I do think meat with lettuce at every meal will eventually get old.
I also do not like to eat eggs.
For tomorrow the goal is overnight soaked oatmeal for breakfast before going to class...some leftover tenders and/or salad for lunch and then for dinner a simple roast chicken that will have been cooking in the crockpot all day with dill potato salad.
Oh and I made ginger carrots as per NT way and they came out way to salty and didn't really seem fermented to me, maybe I messed up somewhere. I did cheat and use already grated carrots....
For friday.... finish the muffins for breakfast and leftovers at lunch time and then lemon glazed turkey cutlets with an artichoke salad for dinner. Both of those recipes are in the 15-minute cookbook as well. And hopefully that day I will have gotten out to the store to get more groceries for the coming week.
Well off to revamp those menu plans so I can make another grocery list.

I know that when I was trying to watch the carbs I would make the family chicken and rice (or something) and I would take some of the chicken from the casserole and eat it with my own personal veggie (roasted in oil & herbal seasonings). That way they still ate what they wanted and I ate the way I needed to.
But its just a thought...
